Dina's Delicious Appetizer

 ...A low cost delicious appetizer that has that "more-ish" quality.


8 oz. softened cream cheese

2 tsp curry powder

½ cup chopped green onions

½ cup raisins

½ cup chopped nuts (optional)


Mix ingredients together.

Spread in a round shape, about 1/2 inch thick on a serving plate. Chill.

Just before serving, pour ‘Safari Sauce’ over prepared cream cheese.

Serve with crackers.

In-A-Hurry Appetizer

 ...This is a sure win when entertaining as it is simple and delicious.


8 oz cream cheese


Pour 'Safari Sauce'  over the cream cheese.

Serve with your favorite crackers. 

Coronation Chicken Salad

 ...This is a great lunch time salad for lovely summer days

6 cooked skinless, boneless

chicken breast halves

1/3 cup raisins

2/3 cup mayonnaise

1 teaspoon mild curry powder

1 tablespoon ‘Safari Sauce’

1 teaspoon fresh lemon juice

salt & pepper to taste

3/4 cup toasted cashews (optional)

Mix together all ingredients.

Chill and serve with fresh bread.

'Safari Sauce' Chicken

 ...This is the simplest and most devine dinner dish!  Substitute one fresh chopped onion if you don't have the soup mix.

12 chicken thighs / whole chicken

1 (8oz)bottle ‘Safari Sauce’

1 (1 ounce) package dry onion soup mix


Preheat oven to 375° F (190° C).

In a medium bowl, combine ‘Safari Sauce’ and dry soup mix.

Mix 'Safari Sauce' and onion soup together.

Season chicken pieces with salt and pepper to taste.

Place seasoned chicken pieces in a 9x13 inch baking dish and pour sauce mixture over chicken.

Bake in the preheated oven for 45 to 60 minutes, or until ‘Safari Sauce’ sauce has turned brown and crunchy. Running a holiday sale or weekly special? Definitely promote it here to get customers excited about getting a sweet deal.

Safari Sweet and Sour Chicken

 ...Deliciously simple, with a nice Chinese undertone

1 tablespoon oil
1 red  or green pepper cubed
1 medium onion cut into chunks
1 tin pineapple chunks
1/2 cup cashews (optional)
1/4 cup bean sprouts (optional)
2 lbs chicken breasts cut into strips
4 tablespoons 'Safari Sauce'
Salt and Pepper to season

Heat oil in a wok or frying pan, add the chicken strips, peppers, onion and fry until cooked through.
Add the pineapple (including the juice) and Safari Sauce and simmer for 15 minutes.
Season with salt and pepper to taste.
Add nuts and sprouts.
Serve hot on a bed of noodles or rice.
Garnish with fresh cilantro. 

'Safari Sauce' Pork Chops

 ...A great simple BBQ recipe...and very tasty

Take pork chops (preferably with bone), season with salt and pepper. Put a teaspoon of ‘Safari Sauce’ on each side and broil/grill for 7-10 min. Turn the chop over and do the same.  

Fog’s Safari Sauce Salmon

..This recipe is from my creative friend Greg who loves to experiment…


1 lb salmon steaks

½ cup fresh cilantro

2-3 cloves garlic

½ bunch fresh asparagus

Salt and Pepper to taste

¼ cup Safari Sauce

1 Cup cooked rice


Crush garlic & cilantro into a rough paste. 

Brush salmon with olive oil, then sear on both sides in a saucepan.

Brush garlic/cilantro paste onto salmon, reduce heat, add asparagus (chop into 2 inch pieces if you wish).  Cook until fish is nearly done to your liking.

Pour Safari Sauce onto fish, cover pan and allow to "steam" for about 2 minutes.

Turn fish to coat other side.

Serve fish over rice with sauce.

Finish the meal with a green salad. 

Shona’s Safari Salmon

 

..My kids love this.  If you have any leftovers, flake the fish and make up a salad of greens….

1 fillet of wild salmon

¼ cup Safari Sauce

1 teaspoon dried dill

1 teaspoon Dijon mustard


Preheat oven to 450 F and place oven rack in the middle of the oven.

Mix Safari Sauce, dill and Dijon mustard.

Line a baking sheet with foil, spray with non-stick.

Place salmon with skin on the underside.

Dress the salmon with Safari Sauce mixture.

Bake for 25 minutes or until the salmon is cooked.

Serve with cooked rice and a green salad.
